Sweet and Spicy Chicken Sandwich (or Wrap)
Adapted for an Induction Cooktop
PREPARATION TIME: 30 minutes – makes 4 servings
Juice from 1 Orange
½ cup whole wheat flour
1 teaspoon white pepper
1 tablespoon garlic powder
1 tablespoon celery salt
1 tablespoon sugar
1 teaspoon cumin
1 teaspoon cayenne pepper
1 teaspoon ground red pepper
3 tablespoons pure Italian olive oil*
2 chicken breast, pounded or flattened and cut in half
Juice of 1 Orange
2 tablespoons sugar
1 teaspoon cornstarch
4 toasted hamburger buns (or wrap in Tortilla)
4 tomato slices
4 onion slices (optional)
Crystal hot sauce to taste
16 Dill pickle slices (optional)
In the mixing bowl, combine orange juice and egg, whisk vigorously to combine.
In the baking or roast pan, combine flour, white pepper, garlic powder, celery salt, cumin, cayenne pepper and red pepper, mix well.
Preheat olive oil in sauté skillet over medium-high heat 375°F (191°C) for Extra Crispy 350°F (180°C) for Golden. NOTE: If you go above 375°F you will burn the oil and the chicken. See Induction Cooking at www.healthcraft.com for Induction Temperature Chart.
Wet hand dry hand; with your wet hand, coat the chicken in the egg and orange juice mixture, then place in flour mixture, turn and coat both sides. With you dry hand, remove the chicken from the flour mixture and place in hot skillet. Fry for 5 to 7 minutes per side. Remove and allow to rest, 3 to 5 minutes.
Optional: Toast hamburger buns or tortillas in olive oil.
While the chicken is frying; in the 1 quart saucepan combine orange juice, sugar and cornstarch and mix well. Place over medium-low heat 225°F (110°C) and whisk until sauce thickens. Remove from heat and set aside.
Place spicy fried chicken on hamburger bun, sprinkle with Crystal hot sauce, and top with orange sauce, lettuce, tomato and onion.
Note: Virgin olive oil is not for frying. Use pure golden Italian olive oil.
