2 large Potatoes, grated
1/2 medium Onion, minced
1/2 fresh Lemon Juice
1 egg
1/2 teaspoon fresh ground Pepper
2 tablespoons Flour, all-purpose
2 tablespoons Matzo-crackers, grated fine
1 tablespoon fresh Parsley, chopped
4 teaspoons Sour Cream |

To prevent Potato Pancakes from sticking when frying grease, pan must be cleaned well with a good stainless steel cleaner. The pan must also be preheated before placed in the pan.
EQUIPMENT : Food cutter (shredding blade), mixing bowl, measuring spoons, French chef's knife, cutting board, medium covered sauté skillet, flexible pancake turner.
Combine all ingredients, except parsley, in a mixing bowl. With your hands, or a large serving spoon, form potato mixture into four equal round servings. Place potato mixture in a medium hot skillet. Press down with flexible (pancake) turner. Cover, open vent, and cook 4-5 minutes until golden brown. Turn, cover, and brown on other side. Serve immediately.
To serve top with Sour Cream and sprinkle with Parsley. |
