1 1/2 pounds (700 g) ground veal, lamb, beef, pork, or chicken or a mixture of these
1/2 onion, finely chopped
1/2 green pepper, chopped
1 stalk celey, chopped
1 cup bread crumbs or oatmeal
1/2 teaspoon basil
1 egg
Salt and pepper to taste

Place all ingredients in a bowl, mix togeather. Press loaf into cool frypan. Top with ketchup or tomato sauce, if desired. Cover and cook over medium heat 15 minutes, reduce to low, cook an additional 40 minutes or until done.

If you are limiting the red meat in your diet; meatloaf is a wonderful recipe to substitute TVP (textured vegetable protein) for ground beef. Check with your local natural food store for availability.
