Dom from Guam Spicy Marinated Tuna Steaks

Adapted for induction cooking. Note: when cooking with an induction range and Health Craft Magnetic Surgical Stainless Steel induction cookware, be reminded that the pan will heat to temperature setting within 15 to 30 seconds. So you must have all ingredients prepared ahead of time and ready to cook and serve.

Equipment: 9” cake pan for coating steak, stainless steel lasagna pan for marinating steaks, Pyrex measuring cup for ginger sauce, 10 1/2” Gourmet Skillet or 11 ¼” Sauté Skillet - for searing steaks.

Preparation time: 20 minutes – Makes 4 Servings

Four 8-ounce Tuna or Swordfish Steaks

Ingredients:

Four 8-ounce Tuna or Swordfish Steaks

1 tablespoon Sesame Seed oil

Marinade or liquid coating

½ cup     Dom from Guam marinade

¼ cup     Sesame Seed Oil, or Olive Oil

2 tablespoons Crystal hot sauce

Juice of one small fresh lemon or lime

In the stainless steel lasagna pan combine Dom from Guam marinade, olive oil, hot sauce and lemon juice. Place tune steaks in marinade and turn to coat.

Dry Coating or seasoned breading

½ cup garlic powder

1 tablespoon garlic salt

1 tablespoon fresh ground black pepper

1 tablespoon ground thyme

In the cake pan, combine garlic powder, garlic salt, ground pepper and thyme. Mix well and set aside

Ginger Glaze

1 cup chardonnay wine

1 tablespoon cornstarch

1 teaspoon ground thyme

2 tablespoons sugar or honey

2 tablespoons powdered ginger

In the Pyrex measuring cup, combine wine with cornstarch, thyme, sugar and ginger. Mix well and set aside.

To cook; add 1 tablespoon sesame oil to coat skillet, then preheat skillet over medium-high heat to sear (induction 475°F/232°C). Place tuna steaks in pan and sear, 1 to 2 minutes per side. Remove the Tuna Steaks to serving plates to rest

To prepare the Sauce; deglaze the skillet with the Spicy Ginger Sauce and mix well. Reduce to Medium-Low Heat (Induction 225°F/107°C). The sauce will thicken in 2 to 4 minutes.

GARNISH

2 tablespoons fresh green onions, sliced

4-6 romaine lettuce leaves, or uncooked spinach leaves

1 lime, sliced in 8 wedges

To serve: Place lettuce leaves and serving plates, slice tuna steaks and place on bed of spinach or lettuce, top with Spicy Ginger Sauce, garnish with sliced green onions, and serve with lime wedges.
