Preparation Time: 20 minutes – makes 6 servings
Equipment: French Chef Knife, Cutting Board, 2 QT. Saucepan with vented lid, mixing bowl, masher or electric mixer.
3-4 Yams, rushed clean and quartered
2 tablespoon brown sugar
½ teaspoon ground cinnamon
6 tablespoons marshmallow fudge
Brush the yams clean with a vegetable brush. In the 2 QT saucepan, cook the yams waterless, about 20 minutes.
In a mixing bowl, combine yams, brown sugar and cinnamon. Mash or whip, with an electric mixer, to desired texture.
To serve, top with marshmallow fudge and peppermint leaf.
